Fat is vital for life. Everyone understands the vital functions performed by organs such as the heart, kidneys, liver, lungs and brain, but few people realise that these organs are composed of cells that:
are packed inside a micro-thin membrane in which fatty acids play a dominant role
are packed inside a micro-thin membrane in which fatty acids play a dominant role
- communicate with other cells using signalling substances made from fatty acids
- use fatty acids as an important part of their control mechanism in order to take readings from the genes in the nucleus of the cell so that proteins can be manufactured.
