Fats are no longer simply regarded as being unhealthy. On the contrary, they are seen to be essential in many contexts. Lipids form part of the materials used to build cell walls and are an important component of the signal molecules contained in every single one of the bodys 75 trillion or more cells. If there is an imbalance between different types of lipids/fats in our diet, there will be an imbalance between various strong signal molecules.
